Oatmeal Cranberry Cookies are a delectable holiday cookie with cranberries, dark chocolate chips and oatmeal.
If you love oatmeal raisin cookies and you love chocolate chip cookies, you have got to try these Oatmeal Cranberry Cookies.
The cranberries are a bit more tart than the raisins (and a bit more festive too!) and instead of chocolate chips there are chocolate chunks. The result? A hearty, chewy cookie that is just the right amount of sweet.
Ingredients you’ll need:
You’ll need the typical cookie ingredients here: all-purpose flour, butter, baking soda, eggs and vanilla. I also use a combination of both granulated sugar and brown sugar. The brown sugar adds extra moisture to make the cookies chewier.
You’ll also need:
Dark Chocolate Chunks: Chunks are bigger than chips so obviously my choice because…more chocolate.
Dried Cranberries: These add a little sweetness like you’d find in Oatmeal Raisin Cookies but I actually prefer the sweet-tartness that the cranberries bring. Plus they are festive.
Oats: Old fashioned oats work best.
Step by Step Photos and Instructions:
Like most cookie recipes, these Oatmeal Cranberry Cookies come together fairly quickly. You can make them using a stand mixer or a hand mixer, whichever you have on hand. Follow along with these step by step photos and instructions showing you how easy they are to make.
Step #1: Beat together the softened butter and sugars until they are light and fluffy. This will take a couple of minutes.
Step #2: Add in eggs and vanilla.
Step #3: In a separate bowl, whisk together the flour, baking soda and salt. Slowly beat the flour into the egg mixture.
Step #4: Fold in the dried cranberries, chocolate chunks and oats. The dough might seem a bit crumbly but firmly forming them into balls will help them stick together. I used a cookie scoop.
Step #5: Bake at 375 degrees F for 10 -11 minutes or until golden brown. Allow to cool for a few minutes before removing them from the baking sheet.
Storage and Leftovers:
These will stay fresh for several days if kept in an air tight container.

Oatmeal Cranberry Cookies
Oatmeal Cranberry Cookies are a delectable holiday cookie with cranberries, dark chocolate chips and oatmeal.
In the bowl of a stand mixer, beat butter, brown sugar and granulated sugar together until fluffy.
Beat in eggs one at a time. Be sure to scrape down the sides of the bowl after adding each egg. Beat in vanilla.
In another bowl whisk flour, baking soda, and salt. Slowly beat dry ingredients into butter mixture.
Fold in cranberries, chocolate chips and oats.
Drop rounded tablespoonful onto prepared cooking sheet. Bake in preheated oven 10 - 12 minutes or until edges begin to brown. Allow to cool slightly on the cooking sheet. Remove to a cooling rack to cool completely. Serve.

These cookies may be a bit crumbly when you are putting them together but if you roll them firmly, the will hold together. Nutrition information for estimation purposes only.
I made this recipe and was unfortunately disappointed. I followed the instructions, double checked the ingredients and measurements only to end up with what more resembled trail mix than cookie dough. It was too dry to even hold together…i added oil and still too dry, then more butter, still…
I’m not sure if i did something wrong or if the recipe just did not have enough liquid…?
I didn’t see when to add the eggs. After adding cranberries (I actually used dried cherries) and chocolate the batter would be too thick for 2 more cups of dried ingredients. Did I miss something?
