Herb Mushroom Cheese Bread is loaded with sautéed mushrooms, 2 cheeses and fresh herbs. It’s perfect for Game Day!
Oh cheese bread. You have a special place in my heart. With your ooey-gooey cheesiness you are just down right irresistible. I’ve made you with jalapeños, with smoked white cheddar and even with kale. Today, I’m adding mushrooms and herbs to the mix resulting in this Herb Mushroom Cheese Bread that would be perfect for Game Day or Girl’s Night.
Despite my love affair with cheese bread, it’s not something that we eat a ton of. It’s more of a special occasion kind of thing. Therefore, like all special occasion type of meals, we kind of like to go all out. That is exactly what I did with this Herb Mushroom Cheese Bread.
Ingredients you’ll need:
FRENCH BREAD: You’ll need half a loaf of french bread for this recipe. Save the other to make another loaf of this cheese bread or maybe your own garlic croutons.
BUTTER AND OLIVE OIL: To sauté the mushrooms. It will help them brown.
CRIMINI MUSHROOMS: These are my all time favorite mushrooms. They have more flavor than their white counterparts but are also available all year long unlike other mushroom varieties. They are sometimes called “Baby bella”.
FRESH THYME: Thyme is a must in this dish. The flavor just goes so well with mushrooms and the Swiss cheese that is also used in this recipe.
MOZZARELLA: I like to use mozzarella in cheese bread recipes because it melts so well and has a fairly mild flavor so it won’t over power the other flavors in the dish.
SWISS CHEESE: Mushroom and swiss cheese is one of my favorite combos on burgers so I thought it would be fabulous to add on this cheese bread.
MAYONNAISE: This is where I might lose some of you but bear with me. You won’t taste the mayonnaise in this dish but the oil will help everything bind together.
GRANULATED GARLIC: You can also use garlic powder. If you only have garlic salt you can use that too but use 1/2 the amount because cheese is salty.
BLACK PEPPER: Coarse ground will give you the best flavor!
How to Make Mushroom Bread:
You guys, this Mushroom Cheese Bread is super easy to make. You can even make it in advance and heat it when you’re ready. Follow along with these step by step photos and instructions to learn how to make it.
STEP #1: Preheat the oven to 425 degrees and cut a loaf of french bread in half lengthwise.
STEP #2: Sauté mushrooms in butter and olive oil until they brown, about 5 minutes. Then allow them to cool.
STEP #3: Mix the mozzarella, swiss, mayonnaise, thyme, garlic, black pepper and cooled mushrooms until well combined.
STEP #4: Spread mixture onto bread. Cook in preheated oven for 15 – 20 minutes or until bubbly. Sprinkle with fresh thyme, if desired. Allow to cool a few minutes before slicing.
Storage and Leftovers:
This bread reheats perfectly! Keep any leftovers covered and in the refrigerator. To reheat wrap in aluminum foil and bake in 325 degree oven for 15 minutes or until cheese is melted.

Herb Mushroom Cheese Bread
An ooey-gooey Herb Mushroom Cheese Bread made with two different kinds of cheese, sautéed mushrooms and fresh thyme. Perfect for game day or girl's night!
1tablespoonfresh thyme leavesplus more for garnish
2cupsshredded mozzarella
1cupshredded swiss cheese
1/4cupmayonnaise
1/2teaspoongranulated garlic
1/4teaspoonblack pepper
1/2loaf french bread1 whole loaf cut lengthwise
Instructions
Preheat oven to 425 degrees.
Heat butter and olive oil in a skillet over medium heat until butter melts. Add in mushrooms and cook, stirring occasionally until the mushrooms start to brown, about 10 minutes. Remove from heat and allow to cool.
Combine cooled mushrooms, thyme, mozzarella, swiss, mayonnaise, garlic and black pepper in a bowl. Mix well.
Spoon and spread mixture on the bread. Cook in preheated oven for 15 - 20 minutes or until bread starts to brown and cheese is bubbly. Remove from oven, allow to cool several minutes, garnish with fresh thyme leaves, slice and serve.
