This Lemon Poppy Seed Bread is the perfect spring time dessert. It works well for brunches, breakfasts on the go and your afternoon coffee break!

My contribution for the first day of #EasterSweetsWeek is this decadent and, perfect for spring, Lemon Poppy Seed Bread.
Once spring finally rolls around I start to get excited for all things, well, springy. I am ready for all the asparagus, all of the pasta salads and all the lemon treats. Lemon treats like this Lemon Poppy Seed Bread. I am calling this a bread because if I do that, that means that it’s perfectly fine to eat for breakfast right? Because I mean if I called this Lemon Poppy Seed Cake it’d be harder to justify eating it for breakfast. But this decadent sweet bread studded with poppy seeds and a hint of lemon flavor is great on the go. It is also perfect for spring and Easter brunch.
This Lemon Poppy Seed Cake is also the perfect sweet bite for your afternoon coffee break. Which between picking up kiddos from school, playdates, karate and baseball, my afternoon coffee break has become my favorite part of the day.
When it comes to sweet bread treats, I tend to gravitate towards banana breads: Nutella banana bread and dulce de leche banana bread to name a couple. But for #EasterSweetsWeek I wanted to create something that screams spring. Lemon desserts totally do that. Don’t you think?
And really, lemon and poppy seed make a great combination.
When making this lemon poppy seed bread, I thought that it would be great alone but would be even better with a quick glaze drizzled over the top. The glaze is really easy to make all you need is some powdered sugar and milk. It’s the perfect touch of sweetness for the top of the bread.
You could even add some lemon zest to give even more lemony flavor.
