Cheesy Baked Broccoli Tots

5 ingredients is all you need to make these Cheesy Baked Broccoli Tots. They are the perfect way to get more veggies into your kiddo’s diet.

Healthy, Quick and Easy Baby Food by my friend, Kathryn M. Doherty from Family Food on the Table, is chock full of recipes that are perfect for your babies, toddlers and even the big kids too! If you’ve ever wanted to take on making your own baby food, this book makes it a cinch!

There are over 100 different recipes in this book. And it is broken up into categories based on age. There is a section for babies aged 6 months that has 1 ingredient purees. A section for combination purees for when your babies are ready to explore bit more. A section for finger foods and lastly a section for Big Kid Meals.

The Big Kid Meals is where I got this recipe for Cheesy Baked Broccoli Tots. And they were a HUGE hit. They taste amazing and they are an easy way to get your kids excited about eating veggies. I mean, who doesn’t love tots?!

What ingredients do you need to make Broccoli Tots?

Like many of the recipes in this book, you just need a handful of ingredients. This makes it super easy! 

BROCCOLI: A fresh head of broccoli cut into florets. 

CHEDDAR CHEESE: Freshly shredded works the best, IMHO. 

PLAIN BREAD CRUMBS/EGG These will help bind everything together. 

ONION: If your kids are like mine, you’ll need to mince this up pretty small so they can’t find it! But the taste it adds is totally worth it! 

SALT AND PEPPER

How to make broccoli tots in step by step photos:

Step #1: Preheat oven to 375 degrees. Line a baking sheet with parchment paper. Spray with cooking spray and set aside. 

Step #2: Bring a medium pot of water to a boil over high heat. Add the broccoli florets and cook for 6 to 8 minutes, until tender. Drain very well. Lightly pat dry with paper towels to remove extra moisture. 

Step #3: Add the broccoli florets to a large food processor and pulse until they are broken down into small pieces but don’t let them turn into mush. 

Step #4: In a large bowl, add broccoli, cheddar, breadcrumbs, onion, eggs, salt and pepper. Stir well to combine. 

Step #5: Using about 2 tablespoons of the mixture, form into tots. 

Step #6: Bake for 25 to 30 minutes until golden brown. Turning halfway through.  Serve immediately.

You can dip these in your favorite dipping sauce. The kiddos prefer ketchup but ranch dip or honey mustard are a favorite too! 

What do you do with leftovers? Can you freeze these?

These will store well in the refrigerator for a couple of days. You can rewarm them in the oven or toaster oven for a few minutes. 

You can also freeze them for 2 to 3 months. Perfect for a quick snack whenever you want!
