Rosemary Roasted Potatoes are a super simple side dish! Made with yukon potatoes, rosemary, salt and pepper.
This recipe is one of those that is great to have on hand. These Rosemary Roasted Potatoes are easy to make. A family favorite. And are right at home on a weeknight dinner table or even a holiday meal.
Potatoes are great because there are so many different ways you can make them, and if we’re being completely honest, I will eat a potato anyway you give it to me. Mashed Potatoes? ALWAYS. French Fries? Of course! Potato salad? You betcha. And roasted. Oh man, roasted potatoes are so good because they are crispy on the outside and oh so fluffy on the inside. Just like these Rosemary Roasted Potatoes.
Let’s talk about what you’ll need to make it.
Rosemary Roasted Potatoes Ingredients:
OLIVE OIL: To coat the potatoes and help them crisp up in the oven.
YUKON GOLD POTATOES: I love using yukon gold potatoes for this recipe because they have a creamy, buttery flavor and tend to hold their shape very well. The skin is also thinner than russets so you don’t need to peel them.
FRESH ROSEMARY: Fresh rosemary will give you the best flavor and texture.
SALT/PEPPER
NON-STICK SPRAY: To spray the baking sheet so the potatoes don’t stick.

Making these Rosemary Roasted Potatoes is so easy! That makes them perfect when you need a side dish on those busy weeknights.
Whisk together olive oil, rosemary, salt and pepper. Toss potatoes to coat completely.Spread on baking sheet and roast.
STEP #1: Whisk together olive oil, rosemary and salt and pepper.
STEP #2: Add diced potatoes to the bowl. Use a spoon to toss the potatoes in the olive oil mixture.
STEP #3: Spray a baking sheet with non-stick spray. Place potatoes in a single layer on the prepared sheet. Bake in preheated oven for 20 minutes. Remove potatoes, turn and bake for another 10 – 20 minutes or until browned and crispy.
Storage and Leftovers:
Store any leftovers in the refrigerator and eat within a few days. You can rewarm them in a the oven, air fryer or microwave.

Rosemary Roasted Potatoes
A simple Roasted Potatoes side dish made with gold potatoes, rosemary, salt pepper and olive oil.
1 1/2poundsYukon Gold Potatoes3 - 5 medium potatoes, diced into 1 inch cubes
Instructions
Preheat oven to 400 degrees. Spray baking dish with non-stick spray set aside.
In a bowl whisk together olive oil, rosemary, kosher salt and fresh cracked pepper.
Add in potatoes and stir to coat completely.
Transfer potatoes to prepared baking sheet. Spread into single layer.
Bake for 20 minutes. Remove from oven and turn. Bake for 10-20 more minutes or until the edges of the potatoes are golden brown. If you like them extra crispy turn on the boiler for 2 minutes.
