Cake Batter Ice Cream Tart

Cake Batter Ice Cream Tart is the easy summer dessert you need in your life! Luscious cake batter ice cream on an Oreo cookie crust.

When it comes to summer desserts, we’re all looking for something that’s tasty, easy and more often than not we want something that cools us down too. That is where this Cake Batter Ice Cream Tart comes in handy because it is all of the above.

First there is a delectable chocolatey cookie crust. Next, softened, creamy cake batter ice cream is spread into the crust, topped with sprinkles and then frozen until firm. See, easy and delicious!

Let’s talk about all the ingredients you’ll need: 

Cake Batter Ice Cream Tart Ingredients: 

  • CHOCOLATE COOKIE CRUMBS: Use Oreos or your favorite chocolate sandwich cookie. No need to remove the filling. 
  • BUTTER: Melted butter will help form the crust. 
  • BIRTHDAY CAKE BATTER ICE CREAM: You can make your own by following my recipe or you can buy it. Baskin-Robbins, Cold Stone and Great Value make a birthday cake flavor. 
  • SPRINKLES: Rainbow jimmies work the best for this. 
  • CHOCOLATE SYRUP: Use your favorite sundae chocolate syrup. 

Step by Step Photos and Instructions: 

Making this Cake Batter Ice Cream Tart could not be easier! If you want to make it even simpler, buy a chocolate cookie crust instead of making it. 

  • STEP #1: Preheat oven to 325 degrees.  Combine cookie crumbs and melted butter in a bowl. Mix until the crumbs are well moistened. Press crumbs firmly into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Bake until set, about 10 minutes. Remove from oven and cool completely. 
  • STEP #2: While the crust is cooling set the ice cream on counter to soften. Once softened spread onto the cooled crust. Top with sprinkles and freeze until firm, about 1 hour. 
  • STEP #3: Remove from freezer, use a knife to gently loosen the sides of the crust and press up the tart bottom to release it from the sides. 
  • STEP #4: Slice, drizzle with chocolate syrup, top with more sprinkles and serve. 

Storage and Leftovers: 

Keep any leftovers covered in the freezer. 

I used Birthday Cake Batter Ice Cream to make this tart but it could really be done with your favorite ice cream!   • 2 cups chocolate cookie crumbs about 30 Oreo Cookies
  • 5 tablespoons unsalted butter melted
  • 1 pint cake batter ice cream
  • chocolate syrup
  • sprinkles

Instructions
 

  • Preheat oven to 325 degrees.
  • Combine cookie crumbs and butter in a bowl and stir until crumbs are moistened. Press crumbs firmly onto bottom and up sides of a 9 inch tart pan with removable bottom. Bake until set, about 10 minutes. Remove from oven and cool completely.
  • While crust is cooling, set ice cream on the counter to soften.
  • Once the crust has cooled and the ice cream is soft enough to spread, spread the ice cream onto the crust.
  • Freeze until the ice cream is firm, about 1 hour.
  • Remove from freezer. Use a knife to loosen the sides of the crust and gently press up tart bottom to release it from the sides.
  • Slice into 8 - 10 pieces. Drizzle each piece with chocolate syrup, top with whipped cream and sprinkles. Serve.

Notes

If you aren't serving 8 - 10 people, just slice a piece for yourself and cover and freeze the rest of it.

    If you live in New Jersey you HAVE to go to gelotti’s in Totowa . My bf and I have to get a quart of their cake batter ice cream each when we go because if we try to share we end up fighting over it! It doesn’t have chocolate in it like Ben and Jerry’s but it has like funfetti cake batter mix in it!

    I tasted cake batter ice cream at the cold stone creamery recently and it is yummy!!! I am trying to cut back on desserts and this dessert is so tempting and I might try it out very soon :)
