Honey Cashews

Honey Cashews are coated with honey, rosemary, salt and cayenne. This sweet n’ salty snack makes a great party recipe or food gift!

While perusing the nut and snack aisle, there are so many seasoned nut options these days. But did you know that you can also make them yourself? It’ll be a little easier on the wallet and it is so easy!

Take these Honey Cashews for instance. Roasted Cashews are a great snack right out of the canister but with a handful of ingredients and 10 minutes you can have a jazzed up snack in no time.

And not only are these Honey Cashews easy to make, they are destined to be a hit because they are just so irresistible. The honey makes them a bit sticky so you get little clusters of sweet and salty cashews. They are a must for any party and make a great food gift too!

Let’s talk about what you’ll need to make them.

Honey Cashews Ingredients:

  • CASHEWS: You’ll want to buy unsalted cashews for this recipe. This allows you to control the saltiness of the final dish.
  • HONEY: Honey and cashews is a great combo. The sweetness of the honey balances out the nuttiness of the cashews.
  • ROSEMARY: Fresh rosemary will be the best for this recipe. Dried rosemary won’t have the right texture.
  • CAYENNE: Adds a bit of heat but not too much.
  • SALT: I recommend using kosher salt because it adds a nice texture.

Step by Step Photos and Instructions:

Making honey cashews is really easy! The hardest part is making sure that the nuts don’t burn as you’re toasting them in the pot. This can happen really fast so just be sure to keep an eye on them.

  • STEP #1: Heat cashews in a large pot or skillet over medium-low heat until they are warmed through. This could take 5 – 10 minutes. Make sure to stir the nuts every couple of minutes to prevent them from burning.
  • STEP #2: Add the honey stir to coat. Remove from heat and add rosemary, salt and cayenne stir to coat the cashews completely.
  • STEP #3: Transfer the honey cashews to a parchment lined baking sheet and spread in an even layer. They will be very sticky at this point. As they harden, they will become a little less sticky but those that are stuck together will form clusters. You can break them apart or leave them together.
  • STEP #4: Allow them to cool slightly and serve warm. They are also good at room temperature.

Storage and Leftovers

For best results store any leftovers in an airtight container and eat within a few days.

Ingredients
  

  • 8.5 ounces unsalted whole cashews about 1 1/2 cups
  • 2 tablespoons honey
  • 1 1/2 teaspoons chopped fresh rosemary
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne

Instructions
 

  • Place unsalted cashews in a large skillet or pot. Cover and toast over low heat for 5 – 10 minutes, just until warmed through. Shake the pan every once in a while to prevent burning.
  • Add in honey. Stir to ensure that all cashews are coated. Remove from heat and stir in rosemary, salt and cayenne.
  • Spread cashews on a parchment lined baking sheet in a single layer. Wait until they are cool enough to touch, but they can be served warm or at room temperature.

Notes

Be sure to keep an eye on the nuts when you are toasting them. They can burn easily! 
Start with 1/8 teaspoon of cayenne pepper to make sure they aren’t too spicy but add more as desired.
