Roasted Mushrooms

Roasted Mushrooms are soft, super flavorful and oh so easy to make! This easy side dish will be your new favorite way to enjoy mushrooms. 

Roasting mushrooms is one of my favorite ways to cook mushrooms. Truth be told, I don’t think that you necessarily need to cook mushrooms for them to be delicious. I will eat mushrooms anyway that I can get them. They are one of my personal favorites, but my family on the other hand, aren’t super fans. So if I’m going to take the giant step and serve them as an actual side dish with dinner, then I’ve got to dress them up a bit. This recipe is the perfect way to do just that.

Slow roasting mushrooms, or any kind of vegetables for that matter, brings out all of their wonderful flavor. So much so that you barely need any seasonings to go with them. Take these mushrooms for instance. With just a sprinkling of herbs, some salt and pepper, a drizzle of olive oil and a little lemon juice for brightness, these mushrooms shine. 

Let’s talk about what you’ll need to make them: 

Roasted Mushroom Ingredients: 

  • CRIMINI (CREMINI) MUSHROOMS: Crimini mushrooms are also sometimes called baby bella mushrooms. They are light tan, firm and have an earthy flavor. The are in the same family as white button mushrooms but are a bit older so they have a more robust flavor. 
  • ROSEMARY: Rosemary is one of my favorite herbs to pair with mushrooms. The woody, sage-like flavor pairs well with the mushrooms. 
  • THYME: Is another one of my favorite herbs to pair with mushrooms because of its peppery flavor. 
  • SALT
  • PEPPER 
  • OLIVE OIL: This will help the mushrooms brown as they roast in the oven. 
  • LEMON JUICE: Adds a brightness and acidity to the dish. 

Step by Step Photos and Instructions: 

Roasting mushrooms in the oven is incredibly easy to do. It’s as simple as tossing the mushrooms in oil and seasonings and then roast. The oven does the brunt of the work in this recipe leaving you with perfectly soft melt in your mouth savory mushrooms. Follow along with these step by step photos and instructions: 

STEP #1: Depending on the size of your mushrooms you’re going to either quarter them or cut them in half. Keep in mind that mushrooms will lose a lot of their size while roasting so cutting them too small can result in really small roasted mushrooms. 

STEP #2: Place mushrooms, olive oil, thyme, rosemary, salt, pepper and lemon juice together in a bowl. Gently toss the mushrooms to coat completely in the mixture. 

STEP #3: Place mushrooms in a small baking dish. It is ok if they are touching but try to keep them in a single layer. Place in preheated oven and bake for 25 – 30 minutes.

Oven roasted mushrooms are my favorite when they are served warm fresh out of the oven. You can also serve them cold on charcuterie boards. 

Storage and Leftovers: 

Keep any leftover mushrooms in an air tight container in the refrigerator. They will keep for a few days. 

Recipe FAQ: 

What is the best way to clean mushrooms?

Mushrooms will absorb water and can become slimy pretty quickly. For this reason, I like to use a damp paper towel to brush mushrooms clean. If you would like to rinse them do a quick rinse under water, don’t soak them.

Are cremini mushrooms and baby bella the same?

Yes! Cremini mushrooms are in the same family as white button mushrooms and portabello mushrooms. They are older than white button mushrooms and younger and smaller than portabello hence the “baby bella” name.

Ingredients:

  • 16 ounces crimini mushrooms cleaned
  • 2 teaspoons fresh rosemary chopped
  • 2 teaspoons fresh thyme leaves
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

Instructions
 

  • Preheat the oven to 375 degrees.
  • Depending on the size of the mushrooms halve or quarter them.
  • Place crimini mushrooms in a baking dish. Sprinkle the rosemary and thyme around the mushrooms. Sprinkle the kosher salt and black pepper over the mushrooms. Drizzle with olive oil and lemon juice. Bake in the preheated oven for 30 - 35 minutes or until mushrooms are tender. Serve hot.

    My boyfriend is not a fan of mushrooms either. Unfortunately, even dressed up he will pick around them…. I doubt I can slip this one by him…but they look so good, I’d be willing to try!!!

    Oh my, I bet if you deglazed that pan with a wee bit of white wine you’d get a lovely little sauce to drizzle on the mushrooms. Must try this pronto.
