I had originally planned to blog about a different recipe today. But then… I made this pizza last night. This pizza is beyond words good. I might even go so far as to say it’s life changing. At least when it comes to how you eat pizza. You see, for the longest time I was a strictly a red sauce, mozzarella cheese, pepperoni and sausage kind of girl. Not anymore, this pizza has no sauce, no mozzarella and no pepperoni. But what it does have is pulled pork, onions, jalapenos, cotija cheese, cilantro and a hint of lime.
Confession time. I think I ate some form of pork every day last week. Seriously, every day. So you’d think that I wouldn’t want to have any this week. And you’d be wrong. Perhaps it’s because I didn’t eat any while I was pregnant, or perhaps it’s simply because pork is delicious. I suspect it’s a combination of both. That is where pulled pork comes in handy. You can make one batch of it and use it in several different recipes throughout the week. Save time. Save money. And enjoy a week of deliciousness.
One more confession. I cheated a bit when making this and used a store bought pizza dough. Hey, what do you expect? I have a 10 month old that is thiiiiissss close to walking. But a store bought pizza dough is like a store bought rotisserie chicken, it can really save you time in the kitchen and still be part of an amazing meal. I buy mine in the fresh foods section at Whole Foods, but other grocery stores sell it as well. I’ve also heard that you can call pizza parlors and they just might sell their uncooked dough to you too. I’ve never tried but a few people have told me that’s an option. Or, if you do have the time you can always make your own crust.
