Celery Salad

This Celery Salad is crisp, light and refreshing salad. It is packed with flavor and a great way to use up that celery in your fridge.

If your house is anything like mine, celery is often reserved for an add in. Something you add to soups like clam chowder or Instant Pot Chicken Stock as part of the base. You add celery to macaroni salad for crunch or use as a base for easy Thanksgiving stuffing.

Celery just never really gets it’s time to shine…until now. This Celery Salad is my newest summer salad obsession. Created when I was cleaning out the fridge and wondering what I should do with a few celery ribs that I had.

It only needs a few ingredients and 5 minutes (20 if you want it to set a while) and that’s it!

What ingredients are in celery salad?

  • CELERY: You’re going to use the rib AND the leaves. All you need to to is chop of the ends and the tip. Then slice it into bite sized pieces.
  • RED ONION: This too you want to slice thin.

DES’ PRO TIP: To take the bite out of raw red onion, I suggest soaking it in ice water for 20 minutes before using. Then pat dry and use in whatever recipe you like!

  • LEMON JUICE: This adds acidity and helps brighten up the salad.
  • EXTRA VIRGIN OLIVE OIL: Use the best you have for this! Because this recipe isn’t cooked, you’ll taste the flavor of the olive oil.
  • PARMESAN: Get yourself a wedge and make shreds yourself using a vegetable peeler. If you’re not into larger pieces of parmesan you can also use a grater. Don’t use the pre-shredded or grated Parmesan in this recipe. Save it for my Garlic Ranch Pretzels!
  • CRUSHED RED PEPPER: Optional but I like the added heat.
  • SALT AND PEPPER: To taste. Keep in mind that the Parmesan is a bit salty so if you plan on letting the salad set before eating it, I’d wait to adjust the seasoning until right before serving.

How do you make Celery Salad?

It could not be easier. Literally. You simply combine all of the ingredients together in a bowl and voila! Celery Salad.

The fact that this Celery Salad is so easy and so quick to make is one of my favorite things. You can have this salad on the table in 5 minutes. How fabulous is that?!

This salad is great as soon as it is made and even better if has had 20 minutes to sit. I usually make it right at the beginning of my prepping of dinner and let all the flavors marry while I finish the rest. It’s perfect!

Ingredients
  

Ingredients:

  • 4 celery stalks with leaves ends trimmed, sliced into bite sized pieces
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1/4 cup thinly sliced red onion
  • 1/4 cup parmesan shavings
  • 1/4 teaspoon crushed red pepper optional
  • salt and pepper

Instructions
 

  • Combine all ingredients together in a bowl. Toss to combine.

Notes

To take the bite out of raw red onion, I suggest soaking it in ice water for 20 minutes before using. Pat dry before adding to salad.
Use the best extra virgin olive oil you can find. The freshest parmesan cheese as well. Skip the pre-grated stuff!
A vegetable peeler works great to make shreds of Parmesan!
Keep in mind that the Parmesan is a bit salty so if you plan on letting the salad set before eating it, I'd wait to adjust the seasoning until right before serving.
