Everyone’s favorite takeout entree is easy to make at home! This Chicken Chow Mein recipe is loaded with veggies and quick enough for a weeknight dinner.
Whenever the takeout craving strikes, one of the dishes that we look forward to most is Chicken Chow Mein. With its tender chicken, noodles and loads of veggies it’s a family favorite for sure. Whether it’s the kids or adults, chow mein is one entree that will please just about everyone.
But guess what, with this Chicken Chow Mein recipe, you no longer need to order take out. Instead, you can make this easy weeknight dinner right at home whenever you get the craving.
Let’s talk about what you’ll need to make it:
Chicken Chow Mein Ingredients:
There are two main components to this recipe: the stir fry itself and the sauce.
CHICKEN BREASTS: Boneless skinless chicken works best in this recipe. I have used both chicken breasts and chicken thighs. Both work well so use whatever it is that you have on hand.
NOODLES: Traditionally chow mein is made with Chinese Egg Noodles which are wheat noodles with egg added. You can buy them fresh or dried. I have used both Sun Luck Chuka Soba and Well-Pac Chow Mein Stir Fry noodles that I find in the international aisle of my grocery store. In a pinch, you can use spaghetti noodles.
CARROT: Peeled and julienned (matchstick cut)
CABBAGE: Cut into shreds.
CELERY: Celery adds a nice crunch to the stir fry.
YELLOW ONION: You’ll want these sliced thin as well.
GARLIC: I prefer to use fresh garlic. 4 – 6 cloves will be enough depending on how much you like garlic.
OIL: Use a neutral oil like vegetable or canola to stir-fry everything.
GREEN ONION: Used to add a pop of color and some freshness to the dish.
To make the sauce, you’ll need:
LOW-SODIUM CHICKEN BROTH: Using low-sodium chicken broth will help keep the saltiness down. Since you are also using soy sauce, this is important.
OYSTER SAUCE: A thick, syrupy sauce that is popular in Chinese cooking. It has an earthy, sweet and salty taste with a flavor that is somewhere between fish sauce and soy sauce. It packs an umami punch!
SOY SAUCE: Adds umami and saltiness to the dish.
MIRIN: Mirin is a type of rice wine. It adds a sweetness to the dish.
Step by Step Photos and Instructions:
One of my favorite things about this Chicken Chow Mein recipe is how easy it all comes together. You can cook the chicken and stir-fry the vegetables while the noodles are cooking. Then toss it all together and voila! Dinner is ready. Follow along with these Step by Step Photos showing you exactly how to do it.
Step #1: Cook noodles according to package directions. While noodles are cooking, whisk together all of the ingredients for the sauce.
Step #2: Measure out 1 tablespoon of the sauce and pour it over the sliced chicken. Toss to coat.
Step #3: Heat 1 tablespoon of oil in a large pan over medium-high heat. Add chicken and cook until chicken is browned and cooked through. Transfer to another plate and set aside.
Step #4: Add 2 more tablespoons of oil to the same pan. Add vegetables (except green onion) and stir-fry until they have softened, about 3 minutes.
Step #5: Add noodles and chicken to the pan. Pour remaining sauce over the top and toss to coat completely. Continue cooking until noodles are warmed through. Sprinkle with green onions and serve.
Storage and Leftovers:
Chicken chow mein will keep well in the refrigerator for at least a few days. To reheat, add a tablespoon of oil to a pan and cook until warmed through.

Whisk together ingredients for sauce. Cook noodles according to package directions.
Toss chicken with 1 tablespoon sauce.
Heat 1 tablespoon oil in a large skillet or wok over medium high heat. Cook chicken until browned and cooked through. Transfer to another plate and set aside.
Heat remaining 2 tablespoons oil in the same skillet. Add cabbage, yellow onion, carrot, cerely and garlic. Cook just until softened, about 3 – 5 minutes.
Return chicken to the pan and add noodles. Pour remaining sauce over the top and toss to coat. Continue to cook until warmed through. Sprinkle with green onions. Serve.
