You heard it here first folks, these Crispy Mozzarella Stuffed Olives are about to be all the rage at your holiday parties and game day get togethers. Black olives stuffed with mozzarella, coated in bread crumbs and fried until golden. They are crispy, crunchy, salty and basically downright delicious.
The nice people at Progresso® contacted me a couple of weeks back to see if I could develop a recipe using their bread crumbs. That for me was an easy yes because Progresso® bread crumbs are one of my favorite pantry staples.I use them when I make my spaghetti and meatballs, I use them as a topper for macaroni and cheese and I use them for all kinds of breading whether it’s chicken, fish or in this case olives. You can find them pretty easy, they are usually in the baking aisle near the flour and cornmeal. Knowing that I needed some for this post, I even picked some up on a recent Christmas shopping trip to Walmart.
The idea for these Crispy Mozzarella Stuffed Olives actually came while I was brainstorming appetizers to make for our Christmas eve get together this year. I’m helping my mother-in-law plan it. It’s nothing big, just our family but it is something I’ve come to look forward to over the years. There isn’t usually a big dinner to plan, instead there is just a buffet of appetizers laid out and we all spend time together while we graze over all the goodies. This year, I offered to help plan so I have been brainstorming different ideas of appetizers that I could add to the mix. That is when these Crispy Mozzarella Stuffed Olives came to mind.
My boys love, love, LOVE olives. It might just be one of their favorite snacks so I knew that these Crispy Mozzarella Stuffed Olives would be a big hit. What I didn’t know was how big of a hit. They popped these in their mouths like popcorn. Seriously, I think next time I’m going to have to make a double batch. But with simple ingredients like Progresso® bread crumbs, a can of olives, string cheese, eggs and milk, it won’t be too hard to double. Or heck, with these growing boys I might even need to triple it. Either way, whether it’s for game days or holiday celebrations, I’m pretty sure a plate of these will be on the table.
