If you, like me, love the briny deliciousness of olives, you are going to love today’s recipe. Whether you are throwing a happy hour at home, girls night or need a quick last minute snack, you have got to try these Dill Marinated Green Olives. They are quick, easy, delicious and completely irresistible.
I’ve already shared with you my recipe for Warm Marinated Olives, this one is a bit different and one that I think is perfect for summer. No cooking involved!
Let’s talk about what you’ll need to make them.
Marinated Green Olive Ingredients:
CASTELVETRANO OLIVES: These are mild, buttery, meaty olives that are perfect for snacking. You can find them whole or pitted. I prefer to use pitted olives for this recipe because it makes them easier to eat.
EXTRA VIRGIN OLIVE OIL: Use the highest quality olive oil that you have to ensure that it’s buttery and not bitter.
WHITE WINE VINEGAR: Will add a touch of acidity and brightness to the dish.
GARLIC: Garlic and olives is a natural combination so of course I added them to this recipe. Minced fresh garlic will add a subtle garlicky flavor.
CRUSHED RED PEPPER: These are optional but add a bit of a kick.
FRESH DILL: Fresh dill is going to give a really bright, herby flavor to these olives.
Step by Step Instructions:
Making these olives is SO easy! It’s one of my favorite parts about it. Only 2 steps and you’re on your way to snacking!
STEP #1: Place olive oil, white wine vinegar, garlic, dill and crushed red pepper in a bowl. Whisk until combined.
STEP #2: Add olives and toss to completely coat in the mixture. These are great right away but even better after the flavors have had a chance to mingle a bit.
Storage and Leftovers:
Store any leftovers in the refrigerator and eat within a few days. Keep in mind that olive oil will coagulate in the refrigerator so simply allow it to come to room temperature for several minutes before serving.
