This Easy Egg Bites Recipe is perfect for breakfasts on the go! Eggs mixed with smoky bacon and chives is a great way to start your day!
If you’re like us, weekday breakfasts can be kind of rushed. Between getting off to school and work, there is not much time. This means we usually resort to cereal or blueberry muffins etc. Or maybe a stop at Starbucks for some egg bites before we head to our destination. But guess what, egg bites are incredibly easy to make at home.
My version of Egg Bites with Bacon and Chives are about to change your busy weekday mornings. These delectable bites are packed with protein, flavor and can be made in advance and then reheated in the morning.

Ingredients:
These egg bites only require a handful of ingredients that you probably have on hand already. Let’s discuss!
THICK CUT BACON: I like to use thick cut bacon in this recipe because I prefer the bacon to be a bit chewier rather than crisp bacon crumbles. It makes a nicer texture in the egg bite.
CHIVES: Fresh chives will add a subtle onion flavor but won’t over power the whole dish.
EGGS: You’ll need eight large eggs for this recipe.
HEAVY CREAM: Will add a little creaminess to the eggs without hiding too much of the egg flavor.
SALT AND PEPPER
How to make Egg Bites:
These egg bites could not be easier to make. Follow along with these step by step photos to see just how easy.
STEP #1: Whisk together eggs and cream. Fold in bacon, chives. Add salt and pepper.
STEP #2: Grease a muffin tin with non-stick spray.
STEP #3: Fill each muffin tin with about 1/4 cup egg mixture. Bake at 350 degrees F for 12 – 15 minutes or until the eggs are puffed and golden. The eggs will deflate once removed from the oven.
Storage and Leftovers:
These keep for a few days in the refrigerator. You can reheat in the microwave for 30 seconds – 1 min.
Variations:
I happen to love eggs, bacon and chives so that is the variation that we do most often in our house. You can also add ditch the chives and add some gruyere cheese for a copycat version of the Starbucks egg bites. You can also had some sautéed peppers and onions. Just make sure any veggies you add are cooked first so that your egg bites won’t be watery.
Whisk together eggs and heavy cream. Add in bacon, chives, salt and pepper.
Spray muffin tin with non-stick spray (or grease with butter). Fill 12 muffin tin cups with 1/4 cup of the mixture.
Bake at 350 for 12 – 15 minutes or until eggs are puffed and browned on the edges.
