Mint M&Ms and mini chocolate chips collide in gooey, chewy Mint M&M cookie bars. They are kiddo favorite, an adult favorite and perfect for holiday cookie tins.
Everyone loves a good M&M cookie, am I right? A perfectly chewy cookie with M&BM candies in each bite. Well what if I tell you that I’ve created a Christmas version with mint chocolate chips?
And then what if I tell you that I went one step further and made a chewy, decadent cookie bar recipe that is loaded with Mint M&Ms, chocolate chips and mini chocolate chips. They are quick, easy to make, versatile and always a crowd pleaser.
All you need is a basic cookie dough recipe, in this case chocolate chip, some of your favorite mix-ins and voila! Cookie bars! Easy right? Right. Let’s get to it.
What ingredients do you need?
FLOUR: All purpose flour is perfect.
BROWN SUGAR: Adds a molasses flavor and chewiness.
GRANULATED SUGAR: Adds sweetness as well as a lightness to the cookie batter.
BUTTER: Make sure that the butter is room temperature because room temperature butter will hold air when creaming which results in a lighter batter.
VANILLA EXTRACT
EGGS
BAKING SODA
SALT: Just a pinch will do and will help bring out flavor of everything.
MINI CHOCOLATE CHIPS: I like to use mini chocolate chips for this recipe, especially for the topping but you can use regular chocolate chips if that is what you have on hand. You can use semi-sweet or dark chocolate chips.
MINT M&M CANDIES: You can’t have Mint M&M Cookie bars without them! Because you don’t use any mint extract, these are where you get the mint flavor from.
Step by Step Photos and Instructions:
STEP #1: Preheat oven to 325 degrees. Line a 13×9″ baking pan with aluminum foil and spray with non-stick spray.
STEP #2: Using an electric mixer (or bowl of a stand mixer fitted with a paddle attachment) in a medium bowl beat together butter, brown sugar and granulated sugar on low speed until fluffy. About 2 minutes.
Step #3: Beat eggs and vanilla into the butter mixture.
Step #4: Beat in flour, baking soda and salt. Continue beating until cookie dough comes together.
Step #5 Fold in 1 cup each mint M&Ms and mini chocolate chips.
Step #6: Top with more M&Ms and chocolate chips. Bake at 325 for 30 – 40 minutes or until golden brown. For the chewiest bars, don’t over bake! Cool completely before cutting.
DES’ TIP: If you want these a bit chewier, under bake them ever so slightly.
I know it’ll be hard, but it is really best to wait until the cookie bars are completely cool before cutting. They will cut better and cleaner that way.
Now that you know the basics of making a cookie bar, you can use any mix-ins that you like. Different candy pieces. Different chocolate chips. You name it! But for Christmas these Mint M&M Cookie Bars really hit the spot!
