I have always been a bit of an Egg Salad sandwich purist, that is until I started exploring different ways to make deviled eggs. Now I am beginning to think that there is a whole wide world out there of egg salad combinations that I need to sample. I decided to start my exploration by making this spicy sriracha egg salad.
I love sriracha. I cook with it. I dip french fries in it. I squirt it on pizza. I stir it into pho. Add it to stir fry. Heck I even marinate chicken in it. It really is my favorite condiment. And if you got the chance to look in my fridge to see the amount of condiments I have, you would know that that is kind of a bold statement. It just goes so well with pretty much everything and this egg salad is no exception. It’s a little bit spicier than your traditional egg salad so if you’re unsure about the amount of spice that you like why not start by adding a couple of teaspoons first then add more if you like.

May 24, 2012 at 8:12 amThis is a good recipe, but it had a lot less Sriracha kick than I was hoping for. Next time I’ll up it to 2 tbsp or maybe throw in some cayanne pepper.
