Verde Chicken Enchilada Pizza

Guys. I am really loving these Kraft Recipe Makers. You know, the new product that Kraft developed that gives you two complimentary sauces that you add your own ingredients to, to make some seriously easy and delicious dishes. Seriously delicious dishes like this Verde Chicken Enchilada Pizza.


Like for reals. I am loving them.

Let me tell you why.

I’ve been going to Barre 3 times a week for a while now and two of those are nights during the work week. And in an effort to avoid paying a babysitter to watch little dude, I always pick a time when Ryan is home to watch him. The classes usually end right smack dab at dinner time meaning that I don’t have a whole lot of time to put into a meal before I have to give Kellan a bath, read him a story, sing him a lullaby and put him to bed.

But that doesn’t mean that I’m just going to throw some pb&j sandwiches on the table and call it good.

Not that I don’t like pb&j, I do. I just want something more for dinner. Something with a bit more flavor. Something a little heartier. And since I have a 21 month old, chances are I probably had pb&j for lunch anyway.

That is where these Kraft Recipe Makers have really helped me. They make making a flavorful, delicious dinner quick and easy.

Take this pizza for instance. You know me, I love, love, love pizza. I love pizza so much that we eat it every Friday. So when Kraft asked me to come up with a second recipe (check out my first one here), using another Kraft Recipe Makers I decided that I wanted to make a pizza with it. And for some reason the Verde Chicken Enchilada Recipe Makers jumped out at me. Perhaps it was the fact that I could imagine all of that chile, cheesy chicken goodness of those enchiladas sitting on top of a perfectly chewy pizza crust.

And that is exactly what this pizza is. Cheesy, chile, chicken heaven.

Oh and something else…I made a video for you. A video showing you just how easy these Recipe Makers are to use.

Gah.

Yes, I made a video. I was a wee-bit nervous about making it. I’ve never done video before. I’ve had food TV aspirations before. For like 60 seconds and then I remembered that to be on TV you actually had to be on camera.

It actually wasn’t all that bad though. It was kind of fun. My favorite part is that in the video you actually get to see the pizza get all melty and bubbly. Mmmm cheesy, melty, bubbly pizza. Who else is hungry?

Verde Chicken Enchilada Pizza

All of the chile, cheesey, chicken goodness you get in Verde Chicken Enchiladas but in the form of a pizza.
Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes
Course Main Dishes
Cuisine American
Servings 4 Servings

Ingredients
  

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium yellow onion sliced
  • 1 package Kraft Recipe Makers Verde Chicken Enchilada
  • 2 cups cooked shredded chicken
  • 1 4 ounce can diced green chiles
  • 1 store bought pizza dough
  • 1 cup shredded mozzarella
  • 2 cups Kraft Shredded Mexican cheese blend
  • 1/4 cup chopped fresh cilantro optional

Instructions
 

  • Preheat oven to 430 degrees.
  • Heat olive oil in a skillet over medium heat. Cook onions until caramelized. About 15 minutes.
  • Combine chicken, green chiles, onions and 1/2 creamy ranchero sauce together in a bowl. Reserve remaining sauce for serving.
  • Press pizza dough into the bottom of a 12-inch cast iron skillet.
  • Spread 1 package of the tomatillo sauce onto the pizza dough. Sprinkle mozzarella cheese on top. Top with the creamy ranchero chicken mixture. Sprinkle with Mexican cheese blend.
  • Bake the pizza in the preheated oven for 15 - 20 minutes or until cheese is melted and bubbly.
  • Remove the pizza from the oven, allow to set for 5 minutes. Sprinkle with fresh cilantro. Slice and serve. If desired, serve remaining creamy ranchero sauce and remaining package of tomatillo sauce on the side for dipping the pizza crust.

    Im pretty new to cooking so I dont have any favorite recipes of my own to alter yet (Im still learning from others favorite recipes lol) but I would love to try to make the Florentine-Stuffed Chicken Breasts with their Three Cheese Florentine Recipe Maker…sounds yummy and I love how easy and quick all their recipes are! Talk about a great way to make a weeknight easier!

    The lemon oregano sauce in the Chicken Cacciatore could also be used for grilled greek chicken breasts sprinkled with feta. I’d use the other sauce on pasta to serve with it.

    I think the KRAFT RECIPE MAKERS Chicken Cacciatore would jazz up my ground Turkey/American Chop Suey: I add cooked beans to the traditional recipe to stretch servings.

    I think anything with an asian flavor (asian fish tacos box) to it works so well with salmon. I would marinade the salmon for about an hour in the fridge (not longer because then it starts to actually cook) and place it on the grill for some smokey flavor. I would add some sauteed julienne veggies (yellow, green and red bell peppers as well as carrots and some mushrooms) to soba noodles as a side dish for the meal adding some of the marinade to the noodles to complement the fish.

    Hubby and I both love BBQ, I haven’t tried these yet but I think using the BBQ maker and doing a BBQ Shepherd’s Pie. It will have a cornbread crust, using chicken or beef, adding corn, onions and bell peppers for the inside of the pie. Top the crust with shredded co-jack cheese.
