Just one week until Memorial Day, friends! The unofficial start to summer! I can’t wait. I am so excited. I am ready for all things summer. All things summer BBQs. All things summer veggies and all things summer salads. Summer salads like this Warm Corn Salad loaded with sweet summer corn, dill, shallots and goat cheese. It’s quick, easy and just begging to be served at all your summer BBQs.
This Warm Corn Salad actually came about after the nice people at All-Clad contacted me and wanted me to review their d5 Stainless Steel All-In-One Pan. In addition to the review, they challenged me to create a memorial day recipe using only 5 ingredients and you know I can’t ever turn down a cooking challenge ;)
More on the Warm Corn Salad in a second though. First, we have GOT to talk about this gorgeous pan.
When it comes to cookware, I am kind of picky. After all, I use it all the time. One of the first things I look for is a pan that will work on an induction stove because that is what I have. The All-Clad All-In-One Pan does. Another thing that I look for is that the pan heats evenly. I’ve used my pan a few times now and find that it does that too.
Perhaps though, my favorite part of the All-Clad All-In-One Pan is that it can fit SO much. Making it perfect for family dinners. We cook a lot of pasta in our house and I’m always trying to fit all the pasta in one pan. This pan is 12 1/2 inches in diameter and can hold 4 quarts. When I tried last week, it fit a whole pound of pasta without any spilling over the sides of the pan when I stirred it. That is a win in my book. I can’t wait to try braising and simmering this fall.
Until that cool weather cooking season comes though I’ll be finding other uses for my All-In-One Pan like making this Warm Corn Salad.
Sticking with the challenge, this Warm Corn Salad has only 5 ingredients (if you don’t count salt): sweet summer corn, creamy goat cheese, crispy bacon, shallots and dill. It’s simple. It’s flavorful. It’s everything you need for a great Memorial Day side dish.

May 23, 2016 at 8:51 amI can’t wait to try the Warm Corn Salad – I love a salad with corn and bacon. One of my favorite salads that I like is Cowboy Caviar or sometimes known as Texas Caviar. I love the way the flavors mingle together. You can actually serve it as a salad, dip or salsa and chips.
