Ingredients

  • 2 pounds ground chicken
  • 1 egg
  • 3/4 cup plain bread crumbs
  • 1 tablespoon whole milk 2% also works
  • 1/2 yellow onion minced
  • 4 cloves garlic minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • salt and pepper

Instructions

  • Preheat oven to 400 degrees F. Combine all ingredients except olive oil and salt and pepper together in a bowl. With clean hands, mix until combined but don't over work.
  • Using a heaping tablespoon of mixture, roll into balls. Place on a 10 x 15 baking sheet (or similar size) about 1 inch apart. Drizzle with olive oil and sprinkle with salt and pepper
  • Bake in preheated oven 15 - 20 minutes or until cooked through. If you want them a little more brown you can turn on the broiler for the last couple of minutes, just keep an eye on them so they don't burn.

Notes

When making meatballs it is important not to over mix the meat mixture. Doing so can create tough meatballs. Mix just until everything is combined and they hold together.
