Ingredients
2poundsboneless skinless chicken breasts
1 1/2teaspoongranulated garlic
1 1/2teaspoonsalt
1 1/2teaspoonblack pepper
1cup cornstarch
1/4cupbuttermilk
1egg
2cupspanko breadcrumbs
2tablespoonsoil
2green onionsoptional
Bang Bang Sauce
1/2cupmayonnaise
2tablespoonssweet chili sauce
2 - 3teaspoonssriracha
1teaspoonhoney
Instructions
Preheat oven to 400 degrees. Whisk together all ingredients for the bang bang sauce so that the flavors can mingle while the chicken is cooking.
Season the chicken with 1/2 teaspoon granulated garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper. Toss to coat.
Set up your assembly line. In one bowl combine cornstarch with 1/2 teaspoon granulated garlic, 1/2 teaspoon salt and 1/2 teaspoon pepper. Use a second bowl to whisk together egg and buttermilk. In a third bowl combine panko bread crumbs, remaining granulated garlic, salt and pepper as well as 2 tablespoons of oil.
Coat the chicken. Dredge each chicken piece in the seasoned cornstarch, dip in the egg wash and finally press into the seasoned panko bread crumbs.
Spray a baking sheet with non-stick spray. Lay chicken in a single layer and bake in preheated oven for 15 minutes. Turn and cook for another 10 - 15 or until breadcrumbs are browned and chicken is cooked through.
STEP #6: Transfer the chicken to a bowl and drizzle with half the sauce. Toss to coat. Add more sauce as desired or serve extra for dipping at the table. Garnish with green onions, optional.
Notes
You can substitute boneless, skinless chicken thighs for the chicken breasts. This sauce can have a bit of a kick to it so if you're unsure of the heat level, start with one teaspoon of sriracha and work your way up from there. If you want the chicken to be a little more brown, turn on the broiler for a minute or two. Just keep an eye on it as it can burn quickly. Nutrition information is for estimation purposes only.
