Blackberry Jam
This Blackberry Jam is sweet n' tart and a great way to use fresh summer blackberries. And, this small-batch refrigerator jam is easy to make!

- 8 ounces blackberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1/2 teaspoon fresh ginger root grated
- 1/2 teaspoon lemon zest
- 1/4 teaspoon salt
Combine all ingredients together in a small saucepan.
Use a potato masher to gently smash the ingredients together.
Bring to a boil over medium heat. Reduce heat to low and cook 15 - 20 minutes or until it thickens. It should coat the back of a spoon.
Allow to cool slightly and store in a clean glass jar in the refrigerator. Use within a week.
This recipe makes about 1/2 cup of jam.
