Blackened Fish
Blackened Fish is a simple, flavorful way to prepare just about any variety of fish. It works great for rockfish, salmon, shrimp and cod.

rockfish
or other firm white fish

blackening seasoning

Instructions
Rub blackening seasoning on both sides of the fish fillets.
Heat cast iron skillet over high heat. Add butter. After butter melts add the fish fillets.
Allow the fish to cook 1 - 3 minutes per side (depending on the size of the fish). Transfer to a serving platter, serve with lemon wedges on the side.
