Ingredients:
4celery stalks with leavesends trimmed, sliced into bite sized pieces
2tablespoonsextra virgin olive oil
1tablespoonlemon juice
1/4cupthinly sliced red onion
1/4cupparmesan shavings
1/4teaspooncrushed red pepperoptional
salt and pepper
Instructions
Combine all ingredients together in a bowl. Toss to combine.
Notes
To take the bite out of raw red onion, I suggest soaking it in ice water for 20 minutes before using. Pat dry before adding to salad. Use the best extra virgin olive oil you can find. The freshest parmesan cheese as well. Skip the pre-grated stuff! A vegetable peeler works great to make shreds of Parmesan!Keep in mind that the Parmesan is a bit salty so if you plan on letting the salad set before eating it, I'd wait to adjust the seasoning until right before serving.
