1poundbaby Yukon gold potatoes
2tablespoonsextra virgin olive oil
2teaspoonsranch seasoning
1teaspoongarlic powder
1/2teaspoonpepper
1/2teaspoonkosher salt
1 1/2cupshredded mozzarella cheese
1tablespoongrated parmesan
1tablespoonchopped fresh parsley
Instructions
Halve potatoes and toss with extra virgin olive oil, ranch seasoning, garlic powder, pepper and salt.
Place seasoned potatoes in the air fryer basket. Air fry at 390 degrees for 15 minutes, shake every 5 minutes.
Spread potatoes in a single layer on baking sheet. Sprinkle with mozzarella cheese. Broil for 2 minutes or until cheese is melted.
Remove from oven and sprinkle with parmesan and parsley. Serve immediately.
Notes
You can use red potatoes or even a blend of tri-colored baby potatoes for this recipe. Russet potatoes would also work but make sure they are cut into bite sized pieces. Nutrition information for estimation purposes only.
