Ingredients

Ingredients:

  • 2 cans garbanzo beans drained well
  • 1 cup diced tomatoes
  • 1 cup diced cucumber
  • 1/4 cup red onion chopped
  • 1/4 cup parsley chopped
  • 1 clove garlic minced
  • 2 tablespoons fresh squeeze lemon juice
  • 1 teaspoon kosher salt
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1/2 teaspoon cumin

Instructions

  • Combine all ingredients in a bowl. Mix well.
  • Cover and refrigerate for 1 hour.

Notes

The longer this salad sits the better so you can make it the day before if you like!
The cayenne pepper does give it a bit of a kick, if you've got people who are sensitive to heat, cut the amount in half or omit it all together.
