Christmas Jam

Christmas Jam is a sweet and tart blend of cranberries, strawberries and sugar. This quick refrigerator jam is great on holiday cheese boards or given as gifts.

Ingredients

  • 8 ounces cranberries
  • 8 ounces strawberries trimmed and halved (or quartered)
  • 2 tablespoons lemon juice
  • 1/2 cup granulated sugar

Instructions

  • Combine all of the ingredients together in a small saucepan.
  • Use a potato masher to gently mash the ingredients together. Bring to a boil over medium heat. Reduce heat to low.
  • Simmer for 15 - 20 minutes or until thickened. It should coat the back of a spoon.
  • Allow to cool, Transfer to a clean glass jar and store in the refrigerator.
