You will love this Greek Chopped Salad! This hearty salad is made with lettuce, olives, tomatoes, red onion and chickpeas tossed in a creamy feta dressing.

Ingredients
5ouncesromaine lettuce
1/2cupcherry tomatoes
1/2cupcucumbersdiced
1/2 cupchickpeasdrained and rinsed
1/4cup kalamata olives
1/4red onionabout 2 tablespoons chopped
fresh cracked black pepper
1/4cupcreamy feta dressing
Instructions
Chop the romaine lettuce. Slice the tomatoes, kalamata olives, cucumbers and red onion.
Place lettuce on the bottom of a large salad bowl. Top with tomatoes, kalamata olives, cucumbers, red onion and garbanzo beans.
Drizzle 2 tablespoons of dressing over the top of salad. Use utensils to toss the salad until all of the ingredients are coated in the dressing. Add more dressing, if desired. Grind fresh black pepper over the top serve immediately.
Notes
Make sure that the lettuce is very dry before assembling the salad. This will help prevent the salad from being too watery. You can make the salad ahead of time, simply wait until just before serving to dress it. Nutrition facts are for estimation purposes only.
