Grilled Zucchini with Burrata

Grilled Zucchini with Burrata is a great way to use up all of that summer garden zucchini. It makes a great side dish for grilled meats and seafood.

Ingredients

Ingredients:

  • 3 zucchini cut lengthwise into 1/4 inch slices
  • 1/2 teaspoon salt
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon dried basil
  • 3 cloves garlic minced
  • 1/4 teaspoon crushed red pepper
  • 4 ounces burrata cheese 2 (2 ounce) balls cut inti pieces

Instructions

  • Slice the zucchini in 1/4 inch slices. Place on a paper towel lined baking sheet and lightly salt. Allow to set for about 15 minutes to draw out some of the moisture then pat dry with paper towels. 
  • In a shallow dish combine olive oil, garlic and crushed red pepper together in a bowl. Add zucchini and toss to coat. Allow to marinate for about 15 minutes. 
  • Grill zucchini 2 - 3 minutes per-side until softened slightly. 
  • Transfer grilled zucchini to a serving platter. Cut burrata into pieces and scatter around the zucchini. Sprinkle with chopped fresh basil. Serve immediately. 

Notes

If you cannot find burrata (or it simply isn't in the budget), you can also use a ball of fresh mozzarella. That would be just as fabulous with this!
