Grilled Zucchini with Burrata is a great way to use up all of that summer garden zucchini. It makes a great side dish for grilled meats and seafood.

3zucchinicut lengthwise into 1/4 inch slices
1/2teaspoonsalt
3tablespoonsextra virgin olive oil
1/2teaspoondried basil
3clovesgarlicminced
1/4teaspooncrushed red pepper
4ouncesburrata cheese2 (2 ounce) balls cut inti pieces
Instructions
Slice the zucchini in 1/4 inch slices. Place on a paper towel lined baking sheet and lightly salt. Allow to set for about 15 minutes to draw out some of the moisture then pat dry with paper towels.
In a shallow dish combine olive oil, garlic and crushed red pepper together in a bowl. Add zucchini and toss to coat. Allow to marinate for about 15 minutes.
Grill zucchini 2 - 3 minutes per-side until softened slightly.
Transfer grilled zucchini to a serving platter. Cut burrata into pieces and scatter around the zucchini. Sprinkle with chopped fresh basil. Serve immediately.
Notes
