Honey Mustard Chicken Skewers

Equipment

  • 8 bamboo skewers

Ingredients

  • 1/2 cup mayonnaise
  • 2 tablespoons honey
  • 2 tablespoons yellow mustard
  • 1 tablespoon vinegar
  • 1/2 teaspoon granulated garlic
  • salt to taste
  • pepper to taste
  • 1 1/2 pounds boneless skinless chicken thighs trimmed and cut into 1 inch pieces
  • 2 tablespoons parsley for garnish, optional

Instructions

  • Combine all the ingredients for the honey mustard dressing in a small bowl. Whisk until combined. Season to taste with salt and pepper.
  • Trim the chicken thighs of excess fat and cut into 1 inch pieces. Pour 1/2 of the dressing over the top of the chicken and toss to coat. Cover and refrigerate for at least 2 hours. Store the other half of the dressing in the refrigerator until ready to use.
  • If using bamboo skewers, soak them in water for at least 20 minutes before cooking.
  • Thread the marinated chicken pieces onto the skewers. About 5 - 7 pieces per skewer.
  • Preheat grill to 350 degrees. When hot cook chicken skewers about 5 minutes per side until chicken pieces are cooked through.
  • Garnish skewers with chopped parsley if desired and serve with remaining honey mustard on the side for drizzling.
