Ingredients
1/2cupmayonnaise
2tablespoonshoney
2tablespoonsyellow mustard
1tablespoonvinegar
1/2teaspoongranulated garlic
salt to taste
pepperto taste
1 1/2 poundsboneless skinless chicken thighstrimmed and cut into 1 inch pieces
2tablespoonsparsleyfor garnish, optional
Instructions
Combine all the ingredients for the honey mustard dressing in a small bowl. Whisk until combined. Season to taste with salt and pepper.
Trim the chicken thighs of excess fat and cut into 1 inch pieces. Pour 1/2 of the dressing over the top of the chicken and toss to coat. Cover and refrigerate for at least 2 hours. Store the other half of the dressing in the refrigerator until ready to use.
If using bamboo skewers, soak them in water for at least 20 minutes before cooking.
Thread the marinated chicken pieces onto the skewers. About 5 - 7 pieces per skewer.
Preheat grill to 350 degrees. When hot cook chicken skewers about 5 minutes per side until chicken pieces are cooked through.
Garnish skewers with chopped parsley if desired and serve with remaining honey mustard on the side for drizzling.
