1/2cuppitted kalamata oliveschopped
1/2cupgoat cheese crumbles
1/2cuproasted red pepper slices
1/4cupstore bought or homemade pesto
4rolls such as cibatta or other rustic bread rollhalved lengthwise
Instructions
To make a sandwich, spread pesto onto bread, top with olives, red peppers and goat cheese.
Place sandwiches in a pan, place aluminum foil on top and then top with another heavy bottomed skillet to press the sandwiches. You can also do this in a panini maker. Cook on medium heat for 2 - 3 minutes or until bread is toasted and cheese has melted. Serve.
