Mint M&M Cookie Bars

Mint M&Ms and mini chocolate chips collide in gooey, chewy Mint M&M cookie bars. They are perfect for holiday cookie tins!

Ingredients

Ingredients:

  • non-stick spray
  • 1 cup unsalted butter softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups mint M&Ms divided
  • 1 1/2 cups mini chocolate chips divided

Instructions

  • Preheat oven to 325 degrees. Line a 13x9" baking pan with aluminum foil and spray with non-stick spray.
  • Using an electric mixer (or bowl of a stand mixer fitted with a paddle attachment) in a medium bowl beat together butter, brown sugar and granulated sugar on low speed until fluffy. About 2 minutes.
  • Beat eggs and vanilla into the butter mixture.
  • Beat in flour, baking soda and salt. Continue beating until cookie dough comes together. 
  • Fold in 1 cup each mint M&Ms and mini chocolate chips.  
  • Top with more M&Ms and chocolate chips. Bake at 325 for 30 - 40 minutes or until golden brown. Cool completely before cutting.
