Ingredients
9crimini mushrooms cleaned and halved
1tablespoonolive oil
1teaspoonfresh thyme leaves
1/2teaspoonblack pepper
6slices bacon
Instructions
Toss the mushrooms with olive oil, thyme leaves and black pepper.
You're going to alternate bacon and mushrooms on the skewer. Grab one slice of bacon and thread it onto the skewer. Thread a mushroom half then bring the bacon up and thread again. Repeat until you have 3 mushrooms on the skewer. You'll end with the bacon. At this point you can refrigerate until ready to cook.
Place skewers in a single layer with the mushroom cut side down in a cast iron skillet. Cook over medium-low heat and cook for 3 - 5 minutes or until mushrooms have browned. Turn and continue to cook until bacon is cooked through.
Sprinkle with salt and more pepper. Serve immediately.
Notes
This recipe should yield approximately 6 skewers depending on the size of the mushrooms. But you can really make as many or as few as you like! Nutrition information for estimation purposes only.
