Oven Fried Chicken

Ingredients:

  • 8 chicken drumsticks
  • 1 cup all-purpose flour
  • 1 3/4 teaspoon salt divided
  • 1 3/4 teaspoon black pepper divided
  • 1/2 teaspoon poultry seasoning
  • 1 egg
  • 1/2 cup milk
  • 2 tablespoons hot sauce
  • 1 1/2 cups panko bread crumbs
  • 3/4 teaspoons granulated garlic
  • 1/2 cup canola oil plus 1-2 tablespoons

Instructions

  • Preheat oven to 400 degrees.
  • In a medium bowl, combine flour, 1 teaspoon salt, 1 teaspoon pepper, and poultry seasoning.
  • In another bowl beat egg, add hot sauce and milk.
  • In another bowl combine panko breadcrumbs, granulated garlic, remaining 1/2 teaspoon salt, and remaining 1/2 teaspoon pepper.
  • Dip the chicken in the flour first. Shake off excess. Next dip in egg mixture. Next coat in breadcrumbs. You may need to press the bread crumbs onto the chicken so it coats it. Repeat until all chicken is coated.
  • Pour 1/2 cup canola oil into a rimmed baking sheet big enough to fit the chicken in a single layer (I used a 10"x15"). The oil should coat the bottom of the pan. Lay the chicken in a single layer. Drizzle a little more canola oil over the top , about 1-2 tablespoons. Bake for 25 minutes. Turn. Bake another 20 minutes or until the chicken is golden brown. Serve hot.
