1tablespoonolive oil
1/2onionminced
3clovesgarlicminced
1orange or red bell pepperseeded and diced
1cupquinoa
2cupschicken broth
1/4teaspooncumin
pinchof cayenne
115.5 ounce can of black beans
2cupdiced cooked chicken breast
kosher salt to taste
Instructions
Heat olive oil in a pan over medium heat. Add onion, garlic and bell pepper. Cook 5 minutes or until softened and fragrant. Stir in quinoa, cook 3 minutes.
Pour chicken broth over the top, bring to a boil. Reduce heat, cover and simmer for 15 minutes.
After broth is absorbed, stir in remaining ingredients. Season to taste with salt.
