Slow Cooker Pork Adobo

Slow cooker pork adobo is a traditional Filipino dish of pork, soy sauce, vinegar, peppercorns and bay leaves. This recipe slow cooks it to perfection!

Ingredients

Ingredients:

  • 2 pounds pork shoulder trimmed
  • salt and pepper
  • 8 cloves garlic chopped
  • 1 medium yellow onion sliced
  • 1 tablespoon whole black peppercorns
  • 1/2 cup water
  • 1/4 cup white vinegar
  • 1/4 cup soy sauce
  • 3 dried bay leaves

Instructions

  • Combine all ingredients, except rice and green onions, together in a slow cooker. Cook on low for 6 - 8 hours.
  • Remove bones and bay leaves from slow cooker. Use a spoon to break apart the meat. Season to taste with salt and pepper. Serve over rice.

Notes

If you are concerned about the spiciness of whole peppercorns, use 1 teaspoon coarse ground black pepper instead. 
I like to add additional salt and pepper at the end because soy sauce is very salty so you want to make sure that you taste the final dish before adding additional salt.
