Ingredients

  • 4 tablespoons salted butter
  • 1 yellow onion chopped
  • 1 pound frozen mixed vegetables
  • 1/4 cup all-purpose flour
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 2 cups low-sodium chicken broth
  • 2/3 cup heavy cream
  • 1 pound cooked turkey meat shredded or cubed
  • 16 ounces refrigerated biscuits

Instructions

  • Preheat oven to 350 degrees. Heat a 5.5 quart or larger Dutch oven on the stovetop over medium-high heat. Once hot, add butter and stir until melted. Then add onion and frozen vegetables. Sauté 5 minutes, stirring frequently.
  • Stir in flour and spices, reduce heat to medium and cook 2 minutes, stirring continuously or until flour begins to brown.
  • Add broth and heavy cream. Continue cooking, stirring occasionally, 1 - 2 minutes until sauce begins to bubble.
  • Immediately remove from heat, then stir in turkey. Arrange biscuit dough on top of the turkey mixture so that biscuits are evenly covering top of potpie.
  • Bake uncovered on center rack 25 minutes or until sauce is bubbling and biscuits are light brown on top. Allow to cook 10 minutes and serve.
