1/3cupdiced shallots
2teaspoonsdried dill
4cupsfresh corn kernelsabout 3 ears
1/2cupgoat cheese crumbles
salt to taste
Instructions
Cook bacon in All-Clad d5 Stainless Steel All-In-One Pan until browned and cooked through. Transfer to a paper towel lined plate, reserve 1 tablespoon bacon drippings.
Add shallots and dill to bacon drippings and cook over medium heat just until shallots soften slightly, 1 - 2 minutes. Add in corn and cook just until warmed through, 5 - 6 minutes.
Remove from heat and stir in goat cheese crumbles. Season to taste with salt and serve.
