White Bean Salad

This easy White Bean Salad made with parmesan and an herb vinaigrette is a great, hearty side dish that is perfect for hot days.

Ingredients

  • 30 ounces Cannellini beans (2 x 15 ounce cans), drained and rinsed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove minced fine
  • 1 teaspoon fresh thyme leaves about 3 sprigs
  • 1 /2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup shaved parmesan cheese plus more grated for serving
  • 1/4 cup parsley

Instructions

  • Rinse and drain the beans. Make sure that the beans are really well drained so that the dressing wont be watery.
  • In a small bowl combine olive oil, lemon juice, garlic, thyme, salt and pepper. Whisk until it comes together.
  • Combine beans, parmesan and parsley together in a large bowl. Drizzle the dressing over the top. Toss to coat and season to taste with salt and pepper. Serve immediately with more Parmesan to sprinkle over the top.
