This easy White Bean Salad made with parmesan and an herb vinaigrette is a great, hearty side dish that is perfect for hot days.

Ingredients
30ouncesCannellini beans (2 x 15 ounce cans), drained and rinsed
2tablespoonsextra virgin olive oil
2tablespoonslemon juice
1garlic clove minced fine
1teaspoonfresh thyme leavesabout 3 sprigs
1 /2teaspoonsalt
1/4teaspoonpepper
1/4cupshaved parmesan cheese plus more grated for serving
1/4cupparsley
Instructions
Rinse and drain the beans. Make sure that the beans are really well drained so that the dressing wont be watery.
In a small bowl combine olive oil, lemon juice, garlic, thyme, salt and pepper. Whisk until it comes together.
Combine beans, parmesan and parsley together in a large bowl. Drizzle the dressing over the top. Toss to coat and season to taste with salt and pepper. Serve immediately with more Parmesan to sprinkle over the top.
